Pumpkin seeds and cheddar cheese salad/ Ensalada de semillas de zapallo y queso cheddar

We can learn so much from one another! This recipe is inspired by fellow mom and talented chef Liz Walker of Blue Kitchen. It’s a delicious and clever way to get kids to eat vegetables...children can’t see the difference between shredded cheddar cheese and shredded carrots once a spoon of yogurt is mixed in.  Mom Power!

 

What you need:

  • Carrots, peeled and washed

  • Cheddar Cheese, shredded

  • Pumpkin Seeds

Plain Greek Yogurt, mayonnaise or sour cream

 

What you do:

Grate equal parts cheddar cheese and carrot. Toast 2 handfuls of pumpkin seeds (high heat in a dry frying pan).  Remove seeds from heat and allow to cool. Then combine all ingredients with a spoonful of yogurt or mayonnaise.

 

 

ESPAÑOL

 

 

Ensalada de zanahoria, queso cheddar y semillas de zapallo

 

Que necesitas:

  • Zanahoria rallado

  • Queso cheddar rallado en partes iguales, 2 puñados de semillas de zapallo, 1 cucharada de yogurt, mayonesa, o crema ácida

Que haces:

En un bowl mezcla, en partes iguales,  la zanahoria, el queso cheddar. Añadir las semillas de zapallo toastadas. Luego, agrega la mayonesa, crema ácida o yogurt; lo que tú prefieras.  Revuelve nuevamente y ¡ya está!
