1 tablespoon oil
½ small onion, diced
1 celery rib diced
¼ bell pepper diced
1 ½ cups cooked ham cut into cubes (can substitute with or add in sausage)
1 garlic clove minced
1 tablespoon Worcestershire sauce
¼ teaspoon chili powder
1 can (14oz) low sodium red beans, drained and rinsed
4 cups cooked rice
parsley, chopped for garnish
In a frying pan add oil, onion, bell pepper, and celery. Saute until soft. Add in the ham.
Add red beans and remaining ingredients except rice.
Stir in rice before serving.
Top with fresh green onions and parsley if you’re feeling fancy.
